Our Velvet dark chocolate is made from a more gentle variety of cocoa, and made in a way that reduces the savoury elements, such as bitterness, acidity and astringency found in the Organic dark chocolate. It is still quite high in both cocoa and chocolatiness however, just without as many of the challenging tastes and flavours. Therefore this is quite a sweet 70% dark chocolate, and has notes of vanilla, hazelnut and raisins and is very similar to gianduja in terms of flavour, with a little bit of fruitiness on the finish. The initial bite is firm (like most dark chocolate due to the cocoa butter and lack of milk fats), but melts very quickly and is silky smooth. The extra cocoa butter also gives a slight cooling effect on the palate.
